Ok, I know what you’re thinking, “cottage cheese in pancakes?!”.
Yes!
This works so well, it gives a guilt free creaminess & lots of moisture to the pancakes, plus when they cook they remain soft and moist on the inside, trust me, when you bite into creamy, cheesy goodness you’ll not regret making these.
Seriously, this is one you have to try in order to see how good it is, so please try them.

This is perfect for a post workout meal due to the protein and good fats, plus the cottage cheese is naturally lower in fat than other cheeses & also a good option for those on pancake Tuesday who don’t have a sweet tooth.

Real chocolate origins + become a pro chocoholic!

So if you’ve even glanced at my blog before then you’ll know I’m a cacao maniac! I love the stuff, I honestly feel it’s one (if not thee!) best thing I’ve discovered. Therefore, when I found out there was a book about chocolate, it’s origins & the bean-to-bar process, I couldn’t wait to get my hands on it.

FYI: Cacao refers to the less processed product & chocolate refers to the more processed typical form.


With a Masters in Food security, I do like to learn all I can about the food we eat and where it comes from, I’ve learnt so much from this book and feel that it should be shared with as many people as possible, so please share this post if you find it helpful.

5 min protein puy lentil bowl with chilli lemon dressing

This one has been one of my go to meals on numerous occasions when I need a quick meal after a workout/busy day & which is also nourishing. I usually have half an avocado floating around the fridge anyway ready to be used up and I always have a packet of microwaveable lentils or quinoa in the cupboard for speedy meals like this.

If you don’t have any leftover turkey/chicken (or are vegetarian) then you could always poach or scramble up an egg pretty quickly, or just leave it out, there’s still a good dose of protein from the lentils.

Also a great lunch idea for the next day that won’t take up too much time from your evening, if your mixing the avocado in with the other ingredients for the next day then use the lemon dressing for the avo as it will stop it from browning.

Low carb 1/5 day healthy breakfast muffin

This is a spin on the 5 min burger bun recipe I did a few weeks back.
I also use the recipe for breakfast too were I toast/heat the bun slightly and use it as a breakfast muffin with typical brekky toppings for a nutritious yet different way to start the day other than a bowl of cereal or smoothie.
